Carrot in a Cake – Carrot Cake!

TEST So Easter is said and done, but I’m not ready to move on just yet.  Rather than call this an Easter cake, I’ll call it a SPRINGTIME, It’s 60 degrees outside (YAY!) cake!

I made white cake batter and tinted it orange, baked it on a cookie sheet that was roughly the size of a jelly roll pan (I don’t know what a jelly roll pan actually IS, I found a measurement online and wung it.)  SO! Orange tinted cake in a fairly large flat pan.  It took 18-20 minutes to cook and mine was not uniformly flat, it raised up in the center some, but it worked out fine for me.  I used a carrot shaped cookie cutter and cut out as many carrots as I could get.  Here starts the pictures:

I put a little chocolate cake batter in the bottom of the pan so they’d stand up nicely and lined the bottom of a long loaf pan with the carrots, pointy sides up.  Then I added the rest of the cake batter, and then maybe 3/4 of ANOTHER cake batter.  The loaf pan is LONG, it’s a LOT of cake!

I had enough batter left to make 6 little cupcakes, too.

We decided since this was a LOT of cake and we wouldn’t be able to get through it all before it went stale, we’d cut it in half and freeze part for next time we need some tasty cake!  So heeeeere’s the big carrot reveal!!

When you turn it out of the pan, the carrots are right-side-up again!

Big Girl helped decorate the top – she put a layer of chocolate glaze that slowly oozed over the sides to look a little like shiny, scrumptious mud.

Then she layered some crushed oreos on top while the glaze was still wet, and just a small handful of green sprinkles to look like grass trying to peek through.

Little Girl used a similar decorating technique on the cupcakes:

The carrot leaves were melted candy wafers put in a plastic or piping bag and squirted out on to foil to make the leafy shape.  We slit starter-holes for those, then poked em right in and added just one small bunny cupcake pic.

Not only it is ADORABLE, but everyone that’s tried it (The girls and hubs) has said YUM!!

I’m thinking this is a great springtime dessert, or for a garden or tea party.  There’s lots of ways we could decorate the top, with chocolates or candy flowers, and of course I’m pondering other  things we can “plant” inside.

Polkadotty Goodness!

For ha-ha’s I showed Big Girl the pinterest pin of the polkadot cake on Once Upon A Pedestal.  That cake is amazing, and I knew there’d be no way mine would ever look like that, but when anyone asked what kind of party she was going to have she’d tell them I was making a polkadot cake.

Thankfully my neighbor Karen had the ball pan for me to borrow:

and then Bobbie Jo bought me my very OWN ball pan – it was awesome to make 2 batches at once, cut my time in half!

The main tip I have is *don’t read the suggestions in the comments of the original post*  I started 2nd guessing myself,  should I freeze the balls, should I undercook them, fret, question, doubt…  Don’t read the comments!!  Don’t put frozen balls in the mix, they’ll lower the temperature of the mix and it’ll take forever for the cakes to cook.

AND the balls will start rising to the top in the center when the outter edges start to cook.  It’ll make ya crazy!

and you’ll have to saw off the top of some of the balls cuz they tried to escape.

It’s hard cutting a cake this tall and taking its picture at the same time.  I had to wait til it laid down.

Our family was impressed, and the cake was YUM, if I do say so myself.

8 is great!!

My little Bean turned 8 this weekend.  We had a small party with her friends at home.

We stuffed a LOT of fun inside!

She’s wanted a cupcake shop before she knew that cupcake shops were a “thing”, so we brought out the cupcake theme again this year.  Heavy on the cupcakes.

 I love finding little water bottle wraps online.  These were a rainbow of polka dots, and I added punched circles of scrapbooking paper with cupcakes on them.  We had juice boxes too, but water was the beverage of choice – I think because the bottles  were so cute!

We went light on the goodie bags because each girl frosted cupcakes to bring home in their own bakery box and fabric aprons with heart shaped pockets.  The baggies included a little plaque with each girl’s initial, some cupcake erasers, and a Cupcakes-to-Go container (meant to store a single cupcake without it getting squashed!) filled with heart shaped marshmallows.

 

The cupcakes kept them busy, homemade buttercream, fondant, gummy things, sprinkles…

and so did the photo-op area.

Everyone had their picture taken by themselves and with the birthday girl, and I got some wonderful group shots.  This was easy-peasy to set up, and they loved the props.  So fun!

I hope my Big Girl thinks her day was sprinkled with fun, 8 is great!

Winter Ice Sculptures and Frozen Shenanigans

Before the photo dump I’ve got prepared for today, Have a look at this!!  Chicago Parent is arranging a community activity for local folks to make ice balloons to display in a park – and they used my picture with their announcement! Woo!

If Chicago wasn’t a 15 hour drive, I’d TOTALLY swing by with a cooler full of frozen balloons!!

Here in CT it hasn’t gotten above freezing today, so my balloons are most definitely frozen.  And so is the rest of me.

 

I’ve got a couple dozen more to play with, but it’s just way too cold today.  Soon.  I’ve been looking through old preschool ice sculpture pictures and just as in love with the idea as I’ve ever been, they’re just the sweetest idea and the end result is so beautiful.

It’s the “community” aspect, too that makes me love it.  I can make blocks and shapes and colors of ice, but it’s not as magical when 4 classes of 3 and 4 year olds and their parents do it together.

So special!

More Birthday Fun!

So I wanted to show you a few more things I made to keep myself busy before and during Babycake’s 6th birthday!

The obvious theme here is ICECREAM, YAY! including the “scratch and sniff” icecream cone t-shirt.

The goodie bags had popsicle molds filled with candies, sherbet flavored lip balm, icecream cone shaped marshmallows and a little stuffed webkin.  I saw on pinterest (of course!) bags embellished with cupcake liners and clothespins.  (the clothespins are queenvanna creations, *ahem*)  It was a great idea, and heavens knows I’ve got a few cupcake liners to spare.

We had pizza and juice boxes, and I found these adorable “for personal use” water bottle wrappers, so I made a few of those, too!

When the girls saw these, they suddenly didn’t want juice boxes, they all wanted water. =D

The shop had coloring and BINGO, and we did face painting:

There was some mention that I should do some party planning, and I love that idea…  but I don’t know how to go about that.  People tell me they’re having a party and I tell them what to do?  SIGN ME UP!

I will tell some people some things…. like which flavor icecream I want.

I think I can say a fun time was had by all.

Being that Babycake’s birthday is MY birthday, too, I on the actual day *i* wanna do something fun, we went to Lake Compounce, a local-ish theme and water park.

I rode a couple of grown up rides and decided I’m probably too old for grown up rides, and had a lovely day spending time with my little family.

   

And now because I love telling people what to do, I think *you* should spend your next birthday doing something you love, too!  There, it’s planned.

peanut butter chocolate pretzels – what’s not to love?

I’ve been lurking on pinterest again.  We have a picnic to attend tomorrow and will bring a dessert… what to make, what to make??  I saw awesome pics of these peanut butter pretzel bites on pinterest and ohyeahboy we had to make them.  This was a great project for Little Girl and I to do together, no cooking, very few ingredients that don’t have to be measured exactly, they don’t have to look gorgeous, it was perfect!

Homemade Peppermint Patties

My girls love peppermint patties and the pictures on this blog and the simplicity of the recipe….  i had to try.

i don’t have a good supply of colored chocolates right now, so i had to go with what i had.  regardless of the outside color, the inside is p.e.r.f.e.c.t.l.y. yum.

kris wants me to try next time with a dark chocolate outside, i want to try with other flavored oils!

My official taste-tester gives her taste a wobbley thumbs up!

Note: they’re very rich and you might like to make them just slightly smaller than you think you would – that way, you make more and whoever is eating them doesn’t have diabetes by the time they’re done with one.  Think somewhere between Junior Mints and Peppermint patty sized.
